Low Carb Broccoli Salad
This low carb broccoli salad is truly divine. I brought this to a potluck at my apartment complex and it was a huge hit.
Most broccoli salad recipes call for sugar in the dressing, but I decided to go for savory. Which makes it low carb friendly and better for you and me.

My favorite part about this recipe is that the dressing uses mayonnaise as a base. You’re probably wonderwhy and it’s because most mayonnaise has a whopping 0 carbs but pack a tasty punch without over consuming the other flavors.
The different flavors in this recipe each bring their own unique component that take this recipe from OK to delicious.
Most broccoli recipes suggest to serve immediately, which you could, but refrigerating it for at least an hour gives the flavors ample time to combine. A great part of this broccoli salad is that it makes a good base for any customizing you’d like to make like adding in ham, sunflower kernels, or cashews.

This is fantastic. I’ve made it several times and even shared it with a coworker of mine who is absolutely not a low carb person and she made it for a party she was having and they destroyed it. She said there was none left.

Made the salad. Live alone and sometimes seems like a lot of fuss making a meal. This went together quickly and I was happy with the taste! Thanks.

This is REALLY good. Had to do a little substituting. I only used 4C broccoli but decreased other ingredients. I wanted some extra crunch so lightly toasted the sliced almonds. Didn’t have Red vinegar on hand so I looked up how to substitute. I used a bit less Apple Cider vinegar in the mayo and added some sprinkes of Sweet and Low to taste.
Let is refrigerated till chilled. REALLY good. Something I have really been missing on this low carb plan!Reply

I made it with Apple Cider Vinegar as well with liquid stevia. No almonds so hubby can eat it since he’s allergic.Reply
